Spicy Mutton With Mint Recipe

Ingredients:

For the Mutton:

  • 500 grams of mutton, either with bones or boneless, meticulously cleaned and chopped into medium-sized portions.

  • 2 tbsp oil or ghee

  • 1 large onion, finely sliced

  • 2 tomatoes, chopped

  • 2 tbsp yogurt (optional, for tenderizing)

  • Salt to taste

  • One cup of loosely packed fresh mint leaves

  • Coriander leaves – for garnish

For the Spice Mix:

  • 1 tsp cumin seeds

  • 1 tsp coriander powder

  • 1 teaspoon of red chili powder

  • ½ tsp turmeric powder

  • 1 tbsp ginger-garlic paste

  • ½ tsp garam masala

  • 2–3 green chilies (slit)

Instructions:

Marinate the Mutton (Optional but Recommended):

Combine mutton with salt, turmeric, yogurt, and half of the ginger-garlic paste in a bowl. Let it rest in the marinade for at least 30 minutes to 1 hour.

Sauté the Aromatics:

Heat oil in a robust saucepan or pressure cooker. Incorporate sliced onions and cook them until they achieve a golden brown color.

Add Ginger-Garlic and Spices:

Add the remaining ginger-garlic paste and green chilies. Sauté until the raw aroma disappears. Next, incorporate coriander powder and chili powder, and allow to cook for one minute.

Cook the Tomatoes:

Add chopped tomatoes and a pinch of salt. Cook until the ingredients are soft and the oil begins to separate from the spice blend.

Add the Mutton:

Add marinated mutton pieces. Mix well to coat with the masala. Sauté over medium-high heat for 5 to 6 minutes, stirring intermittently.

Pressure Cook / Slow Cook:

  • If using a pressure cooker: Add 1 cup water, cover, and cook for 4–5 whistles or until tender.

  • If using a pot: Add 1½ cups water, cover, and simmer for 45–60 minutes until mutton is fully cooked and tender.

Add Mint and Garam Masala:

Once the mutton is fully cooked and the gravy has reached a thick consistency, add the chopped mint leaves and garam masala. Continue to simmer for an additional five minutes to enhance the flavor.

Garnish & Serve:

Add fresh coriander leaves and additional mint, if preferred.

Serving Suggestions:

  • Serve while hot alongside steamed basmati rice, cumin rice, or naan/roti.

  • Serve alongside raita or a cucumber salad for a refreshing complement.
