Savoury Samp Recipe

Here’s a delicious Savoury Samp recipe, a popular South African dish enjoyed for its rich, comforting flavors.

Ingredients:

  • 2 cups dried samp (crushed dried corn)

  • 4 cups water (for soaking)

  • 4 cups vegetable or chicken stock

  • 1 onion, finely chopped

  • 2 cloves garlic, minced

  • 1 cup diced tomatoes

  • 1 teaspoon curry powder

  • 1 teaspoon paprika

  • ½ teaspoon ground black pepper

  • 1 teaspoon salt (adjust to taste)

  • ½ cup grated cheese (optional, for a creamy texture)

  • 2 tablespoons butter or oil

  • Fresh parsley or coriander for garnish

Instructions:

  1. Soak the Samp—Rinse the samp under cold water and soak it overnight (or for at least 4 hours) to soften it. Drain before cooking.

  2. Cook the Samp- Bring 4 cups of stock or water to a boil in a large pot. Add the drained samp and simmer for 1.5 to 2 hours, stirring occasionally, until tender.

  3. Prepare the Seasoning – In a separate pan, heat butter or oil. Sauté the chopped onion and garlic until soft and fragrant.

  4. Add Flavors – Stir in the diced tomatoes, curry powder, paprika, black pepper, and salt. Cook for a few minutes until well combined.

  5. Combine Everything – Add the cooked samp to the seasoned mixture. Stir well to coat and let it simmer for 10 more minutes, allowing the flavors to blend.

  6. Optional Additions – For a creamy texture, stir in grated cheese before serving.

  7. Garnish & Serve – Sprinkle fresh parsley or coriander on top and serve hot as a side dish or a hearty meal.
