Chicken Curry Cottage Pie Recipe

A delicious twist on the classic cottage pie, this Chicken Curry Cottage Pie combines the comforting flavors of a creamy mashed potato topping with a rich and flavorful spiced chicken curry filling. Perfect for a cozy meal!

Ingredients

For the Chicken Curry Filling:

  • 500g boneless chicken (diced)

  • 1 onion (finely chopped)

  • 2 cloves garlic (minced)

  • 1-inch ginger (grated)

  • 2 tomatoes (chopped)

  • 1 cup chicken broth

  • 2 tbsp oil

  • 2 tsp curry powder

  • 1 tsp garam masala

  • 1 tsp turmeric

  • 1 tsp cumin

  • ½ tsp chili powder (adjust to taste)

  • Salt & pepper (to taste)

  • ½ cup frozen peas

  • ½ cup carrots (chopped)

  • ½ cup bell pepper (optional)

  • 2 tbsp fresh coriander (chopped)

For the Mashed Potato Topping:

  • 4 large potatoes (peeled and boiled)

  • ½ cup milk

  • 2 tbsp butter

  • Salt & pepper (to taste)

  • ½ cup grated cheese (optional)

Instructions

1. Prepare the Chicken Curry Filling:

  1. Heat oil in a pan over medium heat. Add chopped onions and sauté until golden brown.

  2. Add garlic and ginger, stirring for a minute until fragrant.

  3. Stir in the chopped tomatoes and cook until soft.

  4. Add curry powder, garam masala, turmeric, cumin, chili powder, salt, and pepper. Cook for 1-2 minutes.

  5. Add the diced chicken and cook until it turns white.

  6. Pour in the chicken broth and let it simmer for 10-15 minutes until the chicken is tender.

  7. Stir in peas, carrots, and bell peppers. Simmer for another 5 minutes.

  8. Add chopped coriander and set the curry aside.

2. Prepare the Mashed Potato Topping:

  1. Mash the boiled potatoes until smooth.

  2. Add butter, milk, salt, and pepper, and mix until creamy.

  3. Stir in grated cheese for extra flavor (optional).

3. Assemble & Bake:

  1. Preheat the oven to 180°C (350°F).

  2. Pour the chicken curry into a greased baking dish.

  3. Spread the mashed potatoes evenly over the top.

  4. Use a fork to create a rough texture on the surface.

  5. Bake for 20-25 minutes or until the top is slightly golden.

  6. Let it cool for a few minutes before serving.

Serving Suggestions:
